2. Is it possible to connect third-party controllers?

1) What do you mean by that? Could you please elaborate?
2) Do you have any specific list of controllers you want to use? Most of the joysticks / gamepad should work out of the box.

Need to make an underwater drone simulator. Need to display different information on different screens. Question - How many screens can be connected for displaying?

It's highly depends on your requirements and available hardware.

You can use Syncker and connect multiple nodes to render any amount of screens at once and synchronize state across the PCs. Normally for that kind of simulations you can use 2-3 displays connected to a single PC.
